The Chemistry of Muffin Making (best muffin recipe EVER!)

It's Christmas Eve, so I thought I'll upload something lighthearted and sweet, just in time for Christmas day. This is one of the most perfect muffin recipes (I've tried so many till I found this one!) and in the end I have put some tips to make sure you get the fluffiest muffins possible.


Chocolate Chip Muffins Ingredients (makes 12 muffins):


Dry Ingredients:

  • 400g plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 150g plain chocolate chips
  • 100g sugar
  • 100g brown sugar 

Wet ingredients:

  • 2 eggs
  • 250ml milk 
  • 125ml vegetable oil
  • 1 teaspoon vanilla extract

How to:

  1. beat your wet ingredients all together 
  2. whisk in your sugar until it doesn't feel grainy anymore
  3. now fold in you flour salt and baking powder to the mixture
  4. fold in your chocolate chips (or anything else you want to add in)
  5. Pour mixture evenly between 12 muffin cases
  6. Bake at Gas mark 6 for 30 minutes (check them at 20 and 25 minutes)

 Top Tips!

  1. make sure all your ingredients are at room temperature before you begin
  2. add the baking powder closer towards when you've almost finished whisking all the  rest of the ingredients together so that the baking powder doesn't react and finish reacting before you have put you muffins in the oven; to get light fluffy muffins
  3. and finally don't stir the batter too much!
